1 sterilised bottle 750ml - 1 litre
Ingredients
100gfresh root ginger
½red chilliadjust to your taste
650mlwater
½lemonjuice and peel
60ghoneyI used orange blossom
60glive apple cider vinegarraw unfiltered
Instructions
Sterilise a 750ml–1L bottle.
Finely slice the ginger. Add to a medium saucepan with the water, chilli and lemon peel.
Gently simmer for 10 minutes. Turn off the heat, cover with a lid and steep for 30 minutes.
Strain through a fine sieve. Top up with water if needed to reach 625g liquid. Cool to room temperature.
Stir in the honey, lemon juice and cider vinegar.
Bottle and store in the fridge for up to 2 weeks.
To serve: Shake the bottle. Dilute 1/3 ginger switchel + 2/3 sparkling water over ice

*Don't add the apple cider vinegar to the ginger liquor when it's hot, you will destroy the probiotics.
