Venison Meatballs & Pickled Red Cabbage Salad

Venison Swedish Meatballs with Pickled Red Cabbage Salad

I adore Swedish meatballs (köttbullar) with numerous recipes on offer and regional variations, they’re hearty, wholesome and truly delicious. Sadly, these days they’re often shop bought, with poor meat content and additives. The homemade version are so good and well worth the effort, trust me I have made them countless times for my children when…

Pickled Blackberries

Pickled Blackberries

I love the ritual of blackberry picking, time spent, basket in hand choosing the ripest juiciest fruit for dessert. When my children were small it was a family affair and a competition as to who could pick the most berries.  Now I’ll take a friend and my dogs to forage and chatter.  Is it me…

Turmeric Houmous with Lightly Pickled Beetroot & Spelt Flatbreads

I can’t remember when I first tasted houmous but I do remember loving the garlicky chickpea dip. Once upon a time in the West it was an ethnic delicacy with a hippy following, now its available in every supermarket! This ancient peasant dish – the authentic version contains chickpeas, mashed and flavoured with sesame seed…

Warm Winter Salad of Beetroot, Kale & Creamed Goats’ Cheese

I’ve enjoyed the pleasure of growing my own vegetables, for a few consecutive years, but the french partridge and pigeons feasted more on my bounty than myself! I gave up. The location of my garden is just too exposed to the local wildlife! So when I discovered a local supplier Maxwell and Webb Potager who were…

Herby Potato Waffle

Herby Potato Waffles with Hot Smoked Salmon & Pickled Vegetables

You probably wouldn’t believe me if I said I preferred savoury over sweet but it’s true. Don’t get me wrong I like the occasional sweet treat but savoury is my taste of choice. This weekend brunch recipe will definitely set you up for a days activities. Waffles are an institution in both Norway and Sweden,…

Brined Salmon with Dill infused Potatoes

Brined Salmon with Creamy Dill Infused Potatoes & Lightly Pickled Cucumber

Most of you are familiar with Gravad Lax, a popular delicacy in the English-speaking world, and English has naturally adopted the short version of its name, gravlax. There seems to be endless ways to flavour this fish from beetroot, horseradish to gin and juniper. You may not be aware of the lesser known Swedish classic…

The Scandinavian Open Sandwich

The Scandinavian Open Sandwich

Open sandwiches (smörgås) are a favourite of mine and also one of the simplest things to create. You don’t need a recipe for them, it’s really just about using your favourite kind of bread and adding the toppings that you’d like to go on it. Begin by spreading just the right amount of butter on your chosen bread. On…

Venison Casserole

Venison Casserole with Pickled Chanterelles

In the north, they have the advantage of being able to indulge in a lot of game during the autumn. Approximately 300,000 Swedes have hunting licenses. In total, they contribute 20,000 tonnes of wild game to the Swedish table every year. As only a certain number of animals can be killed each year thanks to decades of…

Instagram post 2197228381062060424_3121393103 I’ve been overwhelmed with enquiries for my sourdough workshop on 18th January. I’m happy to say that it’s now fully booked. If you’d like to join another workshop I’m happy to set a date in March. If you’re interested DM me on here.

In the meantime here’s a Festive loaf.

My biggest festive bake so far - 45 saffron buns, 35 Cardamom buns, 35 Cookie bags, 22 loaves of Organic rye bread, countless bags of Swedish crispbread, amongst other festive treats, one of which was a white chocolate and lingonberry kladdkaka (sold it all in a flash)- a squidgy, scrumptious cake that’s very popular in Sweden. Lingonberries are not readily available here so I thought I’d share the recipe with you using cranberries. The tart cranberries counter the sweet chocolate perfectly.

White Chocolate & Cranberry Kladdkaka.
•
2 large eggs, room temperature
180g caster sugar
110g butter
170g white chocolate, chopped
160g plain flour
Zest of a lemon
75g cranberries or blueberries
•
1. Oven 190C fan, grease a 20cm loose bottom tin and line the bottom with parchment paper.
2. Whisk the eggs and sugar until light and fluffy.
3. Melt the butter in a saucepan on a low heat then remove from heat. Stir in the chopped chocolate and stir until it melts, pour into a mixing bowl, now whisk in the egg mixture to the melted chocolate, it will thicken as you whisk.
4. Sift the flour and add the lemon zest and then fold into the white chocolate batter.
5. Pour the batter into the tin and smooth out and then sprinkle over the berries, pushing them into the batter.
6. Bake the cake for about 20-22 minutes or until it’s golden at the edges but still wobbly in the centre. Remove from the oven and allow to cool before removing from the tin. Dust with icing sugar. Serve with whipped cream. .
.
❄️Freezes well. Defrost and serve at room temperature.

Instagram post 2191596397216418557_3121393103 Started my Wednesday morning baking dozens of these seeded crackers (fröknäcke) for Marlow Market. They’re delicious with cheese but really good as a snack in their own right. Believe me once you start eating them, it’s really hard to stop!
